You can make sorbet. Just put some strawberries in the freezer and then put them in a blender.

Lots of processed sugar is definitely bad for you, but I did strict keto for 4-5 years and found that almost no carbs harmed my gut, so I have had to increase carbs. I do get basically all of them from fruits and vegetables (and a little rice. Most grains are GMO and/or drenched in herbicides/insecticides. Glyphosate is particularly harmful to good gut bacteria).

I think the most important thing is to eat whole foods, organic or home grown if possible. My only compromise is chocolate, but I go extra dark. Occasionally I'll eat as low as 70% cocoa, but I usually eat 92%.

I went on keto for one year, then got tired of fighting it - like you said, we need some carbs.

Thanks for the heads up on glyphosate - I'm going to buy Bob's Red Mill organic oats from now on - even though they cost about twice as much.

If you decide to switch to dark chocolate, you will probably have to slowly increase the darkness. The dark chocolate is usually so much higher quality, but it is also pricier.

It is hard, but it is right to start.
